In addition to subscription CSA boxes, Gather offers bulk custom whole-animal processing. Whether you are looking to fill your freezer, or share with friends and family, our custom cutting is a cost-effective way to get your hands on quality local proteins. You do not need to be a CSA subscriber to make a custom butchery order.

We offer bulk processing for beef, pork, and lamb. All animals are sourced from small farms in our region and free of hormones, GMOs, antibiotics, etc. For information on breed and feed, please drop us a note!

Anything you order will be butchered from whole carcass by our small team of butchers here in Chicago. Cuts will be vacuum sealed, labeled, and frozen prior to delivery / pick up.

When you place an order, our team will reach out to give you a chance to specify exactly how you would like your animal or primal butchered. This will be a collaborative process!

Your order will be butchered, vacuum sealed, frozen, and delivered right to your door. Expect roughly 1-2 weeks turnaround time (to allow for us to communicate with you on your preferences, order from our farmers, and fulfill the order). You will have the ability to choose from a range of dates and times for delivery.
